Behind the Bar: The Cardinal at 109 & Co.

In our first installment of Behind the Bar, Michael Peace, owner/bar manager at 109 & Co., shows us how to make one of his signature cocktails … The Cardinal. Ingredients: (serves 1)
-1 oz. Eagle Rare Bourbon
-1 oz. Aperol
-1 oz. Antica Formula Sweet Vermouth
-.25oz. Fernet-Branca
-dash of Boker’s Bitters
-dash of Bittermens
-simple syrup to taste
-garnish with lemon zest

Directions:
1. Add all of the ingredients into a large glass with plenty of ice. Stir for 45 seconds (do not shake).
2. Strain and pour into a chilled coup glass.
3. Garnish with lemon zest.
