Being the first is almost never easy. In the case of Joy Evans and Kristi Scott, owners of North Little Rocks first ever food truck stop The Filling Station, it’s definitely an understatement.
The brainchild of Joy, these ladies have had to rewrite the books to see their dreams come to fruition. They worked for close to a year with the City of North Little Rock to rewrite zoning legislation to allow more than one food truck on the lot at a time. There was also the challenge of convincing the truck owners that having multiple trucks at once can work.
After clearing those hurdles, The Filling Station faced their biggest hurdle yet COVID-19.
“It was a very hard but easy decision to open in the middle of a Pandemic, but we felt that our concept was something that could succeed” said Kristi. “We have done remarkably well especially when you consider that we opened in the middle of COVID-19”
One of the main focuses is bringing locally sourced goods into the market. They worked with local vendors such as The Crosontary and Lost Forty Brewing to sell Arkansas made goods.
“We want to support our local farmers and vendors as much as possible. There’s no better way to be apart of the community than to sell local goods.” said Kristi
They then wanted to create a loving, family, and pet friendly environment inclusive of everyone. Along with that, they want local food truck owners to know that they have streamlined the process for running your food trucks on their lot.
“If we can bring people together through good food and a great atmosphere then we have done our jobs as members of the Park Hill community,” said Kristi.
The Filling Station is located at 3623 JFK, North Little Rock and will be open Thursday – Sunday 11am – 8pm. North Little Rock Covid-19 social distancing protocols are followed which mean that masks are required when not eating. Well behaved pets are allowed on property to make this a truly enjoyable trip for the entire family.
