There is a reason I love to bake. My mom and grandma always let me stir, whatever it was they were making I was always allowed to help. This recipe is a family favorite. This is my mothers banana nut bread recipe that she has made since I was a kid. We would make it a lot on saturdays and usually take my grandma a loaf. It brings back a lot of memories.
I love recipes that can be used for different occasions. Pair this with some coffee and it goes great for breakfast or brunch. Slice off a piece, throw it in a bag and it makes a great mid-day snack. The recipe makes two loaves which is great for sharing, I often keep a loaf and give the other away to a friend.
1 1/2 c. sugar 3 eggs
1/2 c. melted butter 3 mashed bananas (don’t use overripe)
1/4 c. buttermilk 1 c. pecans (chopped)
2 c. flour 1 tsp. vanilla
1 tsp. baking powder 1/2 tsp. baking soda
1. Pre-heat your oven to 350 degrees and grease two loaf pans.
2. In a large bowl, mix all of the ingredients together until well combined. (You may also use 2 cups of self rising flour instead of all purpose with baking powder/soda.)
3. Pour the mixture equally between the pans and bake for 40-45 minutes until golden brown. My oven takes 45 minutes.
My favorite way to eat to eat it is plain straight out of the oven, but it is also great toasted with butter for breakfast. Enjoy!
