Celebrate Autumn with Trio’s Seasonal and Classic Cocktail Menu

If you’re looking for great food with an equally awesome atmosphere when you head out to eat, Trio’s Restaurant is likely to top your list. For nearly the past 30 years, the restaurant has successfully put out deliciously fresh food.
Perhaps what might have slid under the radar, however, is the availability of a top-notch cocktail at the establishment. Recently beverage director Merrick Fagan has been creating original seasonal cocktails for Trio’s patrons.
His days of creating cocktails go back to his days at college, in which he and his roommate ran a speakeasy in his room. He laughs about it now, but for the past ten years he’s been in and out of bars, creating craft cocktails.
He has a fall menu out now which includes three original libations. If you have a thing for pumpkin, apples, cinnamon and more – you won’t want to miss this list.

First up is the Fall Rising. Consisting of Torres 10 Brandy, Becherovka, Cinnamon-Ginger Simple Syrup, Crème de Cassis and Lemon, this drink aims to please. Think light and fresh, with the perfect taste of autumn partying on your taste buds.
If you consider all things fall to include pumpkin, try The Frap Queen. This little beauty contains El Dorado 5 & Myer’s Rum, Home-made Pumpkin Spice Mix, Godiva Chocolate Liqueur, Domaine de Canton Ginger, and Cream. “This is basically our pumpkin spice latte drink,” Fagan explains, “but what’s different about it is I actually use a pumpkin puree to create this one.”
Last but certainly not least is the Ochre, my definite favorite of the list. The drink comes with Laird’s Applejack, Fagans’s own “Hearthaw” Liqueur, and Domaine de Canton Ginger.
Fagan says, “I had the idea for this one back in the summer, but I knew it would be great in the fall.” He is rather proud of his homemade ‘hearthaw’ which he says, “includes a hearty combination of baking spices – cinnamon, ginger, vanilla, orange zest, and clove” Every sip feels like a perfectly balanced, apply heaven on your palate.
If you haven’t yet tried these cocktails get out to Trio’s to try a couple today. Don’t forget to take a look at the signature cocktail list – the Peony – a crowd favorite, is a must try. Also keep your eyes peeled for the winter menu, which promises to be packed with excellent original drinks.
If Fagan is behind the bar, ask him about the names of his cocktails – you’re in for a treat.
